Ingredients
- 2 C brown rice
- 1/4 C olive oil
- 1 onion, chopped
- 1 jalapeno chile - stemmed, seeded & finely chopped
- 1-1/2 LBS skinless, boneless chicken breasts, cut into 1" pieces
- S & P
- 1/2 pineapple, cut into 3/4" pieces (abt 3C)
- 1/2 C jerk marinade, such as Lawry's
- one 15-oz can black beans, rinsed
- 1/2 C chopped cilantro
Preparation
Step 1
in lg. pot of boiling, salted water, cook rice, uncovered & stirring occasionally, until tender, abt 30 min
drain
meanwhile, in lg. skillet, heat 2 TBL olive oil over med heat
add onion & jalapeno
cook until onion is browned, 7 men
transfer to bowl
add remaining 2 TBL olive oil to same skillet
increase heat to med-high
season chicken w/ S&P
add to pan & cook 7 min
add pineapple & jerk marinade & simmer until chicken is cooked through - 2-3 min
stir in onion mixture, black beans & cilantro
cook until beans are heated through, abt 1 min
season w/ S & P
serve over rice
