Pork Chops Creole

Ingredients

  • 6 Pork chops, rib or loin cut 1/2" thick
  • 1 cup diced celery
  • 1 med. onion, chopped--about 1/2 cup
  • 2 tsp. chili powder
  • 1 can red kidney beans
  • 1 can whole kernel corn
  • 1 cup rice
  • 1 can tomato soup
  • 1 soup can water
  • 1 1/2 tsp. salt
  • 1 tsp leaf oregano
  • 1/4 tsp. pepper

Preparation

Step 1

l. Brown pork chops in their own fat in large skillet; remove and set aside; drain all but 2 Tbsp. drippings from pan.
2. Saute celery and onion until softened in same skillet; stir in chili powder; cook 1 min.
3 Stir in kidney beans and liquid, corn and liquid, rice, tomato soup, water, salt, oregano and pepper. Mix well and bring to a boil
4. Pour into a greased 12-cup baking dish. Arrange browned chops on top; cover
5 bake in a 350 degree over for apporx. 1 hour.
