- 10 sun-dried tomatoes
- 4 ounces goat cheese, softened
- 3 ounces cream cheese, softened
- 1 10-inch baked homemade pizza crust or purchased pizza crust
- 2 teaspoons oregano
- 2 teaspoons basil
- 2 teaspoons Italian seasoning
- 1 cup trimmed fresh spinach
- 1 (4 oz) jar roasted red peppers, rinsed, chopped
- 1 (14 oz) can artichoke hearts, drained, chopped
- 3/4 cup Parmesan or Romano cheese
- 1 cup crumbled feta cheese
Preparation
Step 1
In a non-metal bowl, soak the sun-dried tomatoes in enough hot water to cover them until softened; drain and pat dry. If the tomatoes are packed in oil, you don't need to soak them.
Heat over to 425 degrees. With an electric mixer, beat the goat cheese and cream cheese in a small mixing bowl until smooth. Spread over pizza crust. Sprinkle with oregano, basil, and Italian seasoning. Layer the spinach, roasted peppers, sun-dried tomatoes, and artichoke hearts over the crust. Sprinkle the Parmesan cheese and feta cheese over the top.
Place on a pizza stone or round baking sheet. Bake for 15-20 minutes or until it is heated through and the bottom is crisp.
Cut into 1 inch pieces and serve as an appetizer, or serve with a lettuce salad as an entree.
