Salads - Double-deck Cherry Salad
As a kid, I looked forward to this salad at the holidays! An interesting combination of flavors!
- 1 #2 size can pineapple tidbits
- 6 oz. pkg. cherry jello
- 3 oz. pkg. cream cheese
- 2-3 tbls. light cream or milk
- 1 #2 can Bing Cherries
- 1/2 cup lemon juice
- 6 oz. pkg. orange jello
- 1/2 cup sliced stuffed (green) olives
Drain pineapple (reserve liquid!). Add water to pineapple syrup to make 1-3/4 cup. Heat to boiling. Dissolve cherry jello in hot liquid. Chill till partially set. Add pineapple. Pour into 8” square pan and chill until firm.
Soften cream cheese with milk. Spread over jello. Chill until firm.
Drain cherries (reserve liquid!). Add water and lemon juice to cherry syrup to make 1-3/4 cup liquid. Heat liquid to boiling and dissolve orange jello. Chill until partially set and add cherries and olives. Spread over cream cheese layer. Chill until firm.
