Ingredients

  • 1 Tbsp. butter
  • 12 cups cubed hearty white bread, or very light whole wheat, preferably day-old
  • 4 cups whole milk
  • 6 eggs
  • 1 Tbsp. vanilla
  • 1/3 cup sugar
  • 3/4 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 Tbsp. instant coffee granules
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup sliced almonds, toasted

Preparation

Step 1

1. Grease inner crock with butter.

2. Place bread cubes in buttered slow cooker.

3. In a mixing bowl, beat together milk, eggs, and vanilla.

4. Add sugar, brown sugar, cocoa powder, and coffee. Stir well.

5. Pour milk mixture over bread cubes. Stir and gently press to get all the bread cubes into the milk mixture.

6. Sprinkle with chocolate chips.

7. Cover and cook on High for 2–3 hours, until puffy and until liquid is gone from the middle. Sprinkle with almonds and press them gently into the surface of the bread pudding.

8. Allow to sit with the lid off for at least 30 minutes, to firm up and cool down a bit. Serve warm with ice cream or caramel sauce or both!
