Ingredients
- 1 (15 oz) can yellow corn
- 1 (2.25 oz) can sliced black olives
- 1 (4 oz) can chopped green chilies
- 1 medium fresh jalapeno chile (about 2 tablespoons chopped) or 1/2 small can, drained
- 2 roasted red peppers, chopped
- 1 cup Monterey Jack or Colby cheese
- 1/2 cup grated Parmesan cheese
- 1 cup mayonnaise
Preparation
Step 1
Heat the oven to 350 degrees. Grease a 9 x 13 inch baking pan. Put the corn, olives, and green chilies in a colander to drain. Combine the corn, olives, green chilies and mayonnaise in a large bowl and mix well. Pour into the prepared baking dish.
Bake for about 30 minutes or until top is bubbly. Serve with tortilla chips.
