Ingredients

  • 2

    cups sugar

  • 2

    cups cooked pumpkin

  • 2

    cups flour

  • 1 1/2

    cups oil

  • 4

    eggs

  • 1

    tsp. salt

  • 2

    tsp. baking powder

  • 2

    tsp. baking soda

  • 2

    tsp. cinnamon

  • Dash of nutmeg

  • 1/2

    cup coconut, optional

  • Cinnamon and sugar

Directions

1. Mix together sugar, pumpkin, oil, and eggs. 2. Add flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Fold in coconut (optional). 3. Line 24 muffin cups with cupcake liners. 4. Divide batter among them. 5. Sprinkle cinnamon and sugar on tops of cupcakes. (Optional) 6. Bake at 350° for 20-25 minutes or until toothpick inserted comes out clean. Cream Cheese Frosting: 1 stick (8 Tbsp.) butter, softened 8-oz. pkg. cream cheese, softened 2 cups confectioners sugar 1 tsp. vanilla 1. In a medium-sized electric mixer bowl, beat butter and cream cheese together until soft and creamy. 2. Gradually stir in 2 cups confectioners sugar. 3. Add vanilla, beating well.
