Apple Cider Chicken

“Planned Over” Instead of haphazard leftovers that sometimes get eaten and sometimes get lost in the fridge, you should plan to make one meal that can be transformed into another meal later in the week. Here is an example of a "planned over." The chicken from this dinner will also be also used for the White Chicken Chili, for lunch later in the week, and possibly for the Black Bean and Quinoa Stir-fry.

Ingredients

  • 2

    T olive oil

  • 1

    cup apple cider

  • 1/2

    cup white wine (optional)

  • 3

    T apple cider vinegar

  • 2

    T tamari soy sauce

  • 3

    garlic cloves, peeled and crushed

  • 1

    tsp. sea salt

  • 1/2

    tsp. black pepper

  • 1

    tsp. cinnamon

  • 1

    tsp. Dijon mustard

  • 5- 8

    oz chicken breasts bone-in with skin

Directions

Mix all ingredients and marinate chicken 8 hours or overnight in a glass container. Remove chicken from marinade and roast at 350° for 50 minutes or until a thermometer registers 165°. Eat a portion for dinner that is about the size of a deck of cards and save the rest for later in the week.
