Spaghetti with Garlic and Oil Sauce
- 1 lb Spaghetti
- Salt to taste
- 1/3 cup extra virgin olive oil
- 1 tsp garlic chopped ver fine
- Chopped hot red chili pepper, to taste
- 2 Tbs chopped parsley
Prepare pasta according to directions.
While the pasta is cooking, put the olive oil, garlic and chopped hot pepper in a small saucepan and turn heat to medium low. Cook and stir the garlic until it is pale golden. DO NOT LET IT BROWN
When pasta is ready, toss with oil, garlic mixture and turn the strands over several times to coat evenly.
Taste and correct for salt. Add parsley, toss once again and serve immediately.
