Risotto

Ingredients

  • 1 TBL olive oil
  • 1 C arborio, short-grain, or converted
  • rice
  • 1 garlic clove, minced
  • 1 sm. onion, finely chopped
  • 1/4 C grated parmesan
  • 1 3/4 C chicken broth or stock

Preparation

Step 1


in 3-QT casserole combine olive oil, garlic & onion
cook on high for 2-3 min, or until onion is tender
set aside
pour broth into 2C glass measure
Cook uncovered on high for 2 min, or until heated but not boiling

meanwhile, stir rice into onions & oil, coating every grain
stir in warm broth
cover tightly & cook on high 4-6 min, or until boiling
cook on med for 8-10 min. more, or until rice swells & almost all liquid is
absorbed
stir in cheese
cover again & let stand 5 min.

during standing time you can add many delicious foods to accompany
Risotto
sauteed mushrooms
asparagus & cream
shrimp
herbs, ie: fresh basil, parsley, etc
sliced zucchini
