Ingredients
- 2 tbsp toasted sliced almonds
- 1/4 cup quick cooking oats
- 1/3 c unsweetened, dried apples, finely chopped
- 1/3 c unsweetened, dried apricots, finely chopped
- 1/3 c unsweetened cranberries or blueberries
- 2 tbsp sunflower seed (raw or toasted/salted)
- 2 tbsp coconut flakes
- 1/2 tsp cinnamon
- 1/2 c peanut butter
- 1/4 c maple syrup or honey
- 1/2 tsp vanilla
- 1 1/2 c quick cooking oats
Preparation
Step 1
Process first 2 ingredients in a food processor to fine crumbs; set aside.
In a large bowl combine dried fruit, sunflower seeds, coconut, cinnamon, peanut butter, maple syrup or honey, vanilla, and oats; combine well until mixture begins to stick together.
Using moist hands, form mixture into 1" balls, coat lightly with almond-oat crumbs, and place into an airtight container. Refrigerate at least 4 hours or overnight to allow oats to absorb moisture.
Serve bites with a cold glass of milk or morning coffee. Makes 36.
