Ingredients
- 2 cups mushrooms, sliced
- 1/4 cup green onion, sliced
- 1 Tbs butter or margarine
- 1 (10-ounce) jar oysters, well drained
- 6 eggs
- 1 cup milk
- 1/4 tsp paprika
- 1/4 tsp pepper
- 2 Tbs cooked, crumbled bacon
Preparation
Step 1
Sauté mushrooms and onion in melted butter in an oven-proof skillet for 3 minutes. Pat oysters dry with a paper towel and add to mushroom mixture. Saute 1 minute or until oysters begin to curl. Drain any liquid. Remove skillet from heat and set aside.
Beat eggs, milk, paprika and pepper with a wire whisk until well blended. Pour mixture over oyster mixture in skillet. Sprinkle with bacon. Bake at 400 degree F for 20 to 25 minutes or until set and browned. Cut into wedges to serve.
