BBQ Beef & Vegetable Stir-Fry

Ingredients

  • 1 beef top sirloin steak (1 lb), cut into thin strips
  • 3 Tbsp reduced-sodium soy sauce
  • 1 garlic clove, minced
  • 1/4 tsp pepper
  • 1 large sweet onion, halved and sliced
  • 1 medium green pepper, cut into thin strips
  • 1 medium sweet red pepper, cut into thin strips
  • 1/4 c barbecue sauce
  • 3 c hot cooked brown rice

Preparation

Step 1

Toss beef with soy sauce, garlic and pepper. Place in a large nonstick skillet coated with cooking spray over medium-high heat. Add beef mixture; stir-fry 2-3 minutes or until beef is no longer pink. Remove from pan.

Add vegetables; stir-fry 3-4 minutes or until crisp-tender.

Return beef to pan; stir in barbecue sauce and heat through. Serve with rice.
