Ingredients
- 3.1 oz Butter
- 12.6 oz Chicken broth
- 3 Tbs Flour
- 3 Egg yolks
- 2 Tbs Lemon juice
- 2 Tbs Dijon mustard
- Cayenne
- salt
Preparation
Step 1
In a medium saucepan melt the butter. Add the flour
Cook for 3 minutes. Stir constantly
Pour the broth. Simmer from 5 to 6 minutes.
Stir constantly
Remove from heat and whisk slightly the egg yolks
Add the lemon juice and mustard and stir well
Put the sauce pan on heat and let cook for 2 minutes
Add cayenne to taste
