Quinoa With Feta Cheese and Edamame

This can be eaten alone or great as a salsa with blue tortilla chips!

Ingredients
- 1 c. uncooked quiona
- 2 c. chicken or beef broth
- 1/2 c. chopped red pepper
- 1/2 c. chopped red onion
- 1/2 c. drained canned corn or frozen corn
- 1/2 c. shelled edamame
- 1/2 c. chopped cilantro
- 3/4 c. crumbled feta cheese
- 1/3 c. Italian dressing
- 1/4 t. salt or to taste
Preparation
Step 1
Rinse quinoa in wire mesh strainer
Add the broth to a medium size pan on medium heat
Add quinoa, stir and bring to boil
Cover pan and decrease heat to low and simmer for 15 minutes or until the Quiona absorbs the liquid
Remove from heat, cool
In a medium bowl, mix pepper, onion, corn & Quinoa.
Add dressing and stir
Add edamame, cilantro and stir
Stir in feta cheese and salt.
Serve chilled or at room temperature
