Four-Bean Slow-Cooker Chili

Ingredients

  • garnish:
  • 2 /tbsp vegetable oil
  • 1 large onion
  • 2 garlic cloves
  • 1 lb ground beef
  • 1 15 oz can white beans
  • 1 15 oz can pinto beans
  • 1 15 oz can kidney beans
  • 1 15 oz can black beans
  • 1 28 oz can diced tomatoes with juice
  • 2 15 oz cans tomato paste
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 2 bay leaves
  • 2 tsp kosher salt
  • sour cream
  • grated cheddar cheese

Preparation

Step 1

Heat 1 Tbsp veg oil over medium heat. Add chopped onion and saute for 3 minutes. Add minced garlic and mince for 1 minute. Place in slow cooker. Add 1 Tbsp oil to pan and saute ground beef about 5 minutes. Add beef to slow cooker. Rinse beans then add to slow cooker. Add diced tomatoes and tomato paste, chili powder, cumin, bay leaves, and salt to slow cooker. Cover and cook on low for 8 hours. Serve with sour cream and grated cheddar cheese.
