  • 10 eggs, beaten
  • 1/4 c milk (coconut milk for paleo)
  • 1/4 c feta cheese, crumbled
  • 1 10 oz frozen pkg spinach, cooked and squeezed dry
  • 10 grape tomatoes, finely chopped
  • 3 slices bacon, cooked and diced
  • Cooking spray

Preparation

Step 1

Preheat oven to 350.
In a large bowl mix ingredients. Spray a 9x13 pan with cooking spray.
Pour mixture into pan and spread ingredients evenly.
Bake uncovered for 30 minutes or until done. (Bake 45 minutes if using 16 eggs)
