- 1
Ingredients
- 2 tablespoons coconut oil
- 1/4 cup popcorn kernels
- 1 teaspoon brown sugar
- 1/2 teaspoon kosher salt
- 1/8 to 1/4 teaspoon cayenne powder
- 1 tablespoon coconut flakes
Preparation
Step 1
Drop 1 tablespoon of the coconut oil in a large pot over medium to high heat, add in 2 or 3 popcorn kernels then cover with a lid. When those kernels start to pop add in the rest of the kernels. Put the lid back on the pot and shake it around to coat the kernels with the oil. Then stop shaking and let the popcorn do its thing, about 2 minutes. When the popping comes to an end (1 or 2 seconds between popping), turn off the heat. Reserve the popcorn in a separate bowl to cool slightly.
Carefully wipe out your pot with a paper towel and add in the remaining tablespoon of coconut oil. Return the pot to medium heat and, when the oil melts, add in the sugar, salt and cayenne powder. When the sugar is fully dissolved, turn off the heat and add in the coconut flakes.
Drizzle the oil mixture over the popcorn and toss thoroughly. Enjoy!
