Carrot Raisin Breakfast Cookies

Ingredients

  • 1½ cups whole-wheat flour
  • 1½ teaspoons baking soda

  • 1½ teaspoons cinnamon
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 banana, mashed
  • ¼ cup real maple syrup
  • 2 eggs
  • 1½ teaspoons vanilla extract
  • 3 cups rolled oats
  • 2 cups grated carrots
  • 1 cup raisins
  • ½ cup of walnuts, chopped (optional)

Preparation

Step 1

Preheat oven to 350 degrees. In a medium bowl, combine flour, baking soda, cinnamon and salt. Ina large bowl, cream the butter with a wooden spoon or mixer. Then add the mashed banana, maple syrup, eggs and vanilla extract.Stir the flour mixture into the butter mixture. Then add rolled oats, carrots and walnuts, if using, until combined.Scoop 2 tablespoons of dough a couple of inches apart onto two parchment-lined baking sheets. Flatten each cookie slightly with your hand or a spoon. Bake 12–14 minutes or until golden.
