Grilled Mushroom Ham and Basil Skewers

  • 1

    lb fresh white mushrooms

  • cup extra-virgin olive oil

  • cup red wine vinegar

  • 3

    oz sliced smoked ham or Canadian bacon, cut in 1-inch strips

    medium red or green pepper, cut in 1-inch pieces

  • 16

    fresh basil leaves

  • salt to taste

  • pepper, to taste

  • 2

    Tbs chopped parsley


Preheat grill or broiler. With small brush clean mushrooms; set aside. In small bowl combine oil and vinegar; set aside. On 4 large or 8 smaller skewers alternately thread mushrooms, ham or bacon, pepper and basil leaves. Brush generously with oil-vinegar mixture; sprinkle with salt and pepper. Grill or broil 4 to 5 inches from heat source until mushrooms are golden, turning occasionally , about 6 to 7 minutes. Place skewers on platter, brush with any remaining oil-vinegar mixture. Sprinkle with parsley.
