Grilled Mushroom Ham and Basil Skewers

Ingredients
- 1 lb fresh white mushrooms
- 1/3 cup extra-virgin olive oil
- 1/3 cup red wine vinegar
- 3 oz sliced smoked ham or Canadian bacon, cut in 1-inch strips
- 1 medium red or green pepper, cut in 1-inch pieces
- 16 fresh basil leaves
- salt to taste
- pepper, to taste
- 2 Tbs chopped parsley

Preparation
Step 1
Preheat grill or broiler. With small brush clean mushrooms; set aside. In small bowl combine oil and vinegar; set aside.
On 4 large or 8 smaller skewers alternately thread mushrooms, ham or bacon, pepper and basil leaves. Brush generously with oil-vinegar mixture; sprinkle with salt and pepper.
Grill or broil 4 to 5 inches from heat source until mushrooms are golden, turning occasionally , about 6 to 7 minutes. Place skewers on platter, brush with any remaining oil-vinegar mixture. Sprinkle with parsley.
