Ingredients
- 8 6 inch flour tortillas
- 16 oz mixed shredded cheeses
- 16 oz black beans
- 16 oz corn, fresh or frozen
- Yellow rice prepared according to package directions
- Guacamole
- Salsa
- Sour cream
- Scallions, chopped for garnish
Preparation
Step 1
Place 4 tortillas on a griddle over medium heat and top with cheese, beans, and corn.
Place remaining tortillas on top, press down firmly with a spatula and flip to brown the other side.
When heated through, remove to a cutting board and let cool slightly.
Cut each tortilla into 4 wedges.
Place warm yellow rice in center of a plate arranging tortilla wedges around the outside.
Serve with guacamole, salsa and sour cream.
Garnish with chopped scallions.
