Ingredients
- 2 C all purpose flour
- 1/3 C poppy seeds
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 C (1 stick) butter - room temp
- 3/4 C sugar
- 2 eggs
- 3/4 C sour cream
- 1 1/2 tsp vanilla
Preparation
Step 1
preheat oven to 375
grease on 12- cup muffin tin
combine flour, poppy seeds, salt & baking soda in sm. bowl
using electric mixer, cream butter w/ sugar until thick & light
beat in eggs - 1 at a time
blend in sour cream & vanilla
gradually beat in dry ingredients
spoon batter into prepared tin
bake muffins until tester in centers comes out clean - abt. 20 min
cool 5 min in tin on rack
remove from tin & cool completely
