Ingredients

  • 6 CUPS WATER
  • 1 LB. DRIED RED KIDNEY BEANS
  • 1 LARGE ONION, chopped
  • 1 LARGE RED PEPPER, chopped
  • 6 STALKS CELERY, chopped
  • 1 tsp DRIED THYME
  • GROUND RED PEPPER, to taste
  • 1 tsp BLACK PEPPER
  • 1 (14 oz) PKG SMOKED TURKEY KIELBASA, cut in bite size pieces
  • 4 - 6 links CHICKEN ANDOUILLE SAUSAGE, cut in bite size pieces
  • 2 BAY LEAVES
  • 2 - 3 TBS GARLIC, minced (more if you really like garlic!)

Step 1


Combine all ingredients in slow cooker. Cover with lid. Cook on HIGH for 5 - 6 hours or until beans are soft. Serve over white/brown rice.
