Ingredients

  • 1-1/2 cups cous cous
  • 1 TBS butter
  • 1-1/2 cups water
  • 1/2 cup plain yogurt
  • 1/2 cup olive oil
  • 2 tsp. white wine vinegar
  • 2 tsp. curry
  • 1/2 tsp. tumeric
  • 2 tsp. kosher salt
  • 1-1/2 tsp. pepper
  • 1 cup grated carrots
  • 1/2 cup chopped flat leaf parsley
  • 1 cup craisins
  • 1/2 cup blanched sliced almonds
  • 4 chopped green onions
  • 1/2 cup chopped red onion

Step 1


Bring water and butter to a boil. Add cous cous. Cover and remove from heat. Let stand for 5 minutes. In a large bowl, flake cous cous with a fork to separate.

Whisk together yogurt, olive oil, vinegar, curry, tumeric, salt and pepper. Mix into cous cous. Add remainder of ingredients and mix well.

NOTE: For a complete meal, add chicken, shrimp, etc.
