Ingredients

  • Almonds and Dressing:

  • cup olive oil

  • ½

    cup sliced almonds, toasted

  • 3

    TBS honey

  • dash cinnamon

  • ½

    tsp grated lime peel

  • 3

    TBS lime juice

  • 1

    tsp dijon mustard

  • ¼

    tsp salt

  • Salad:

  • 1

    pkg spinach leaves, torn

  • 1

    pint fresh strawberries, sliced

  • 1

    grapefruit, peeled and sectioned

Directions

Line baking sheet with foil, spray with pam. Heat 2 TBS oil in skillet over medium heat until very hot. Add almonds, cook and stir till lightly browned. Add 1 TBS honey and cinnamon. Cook and stir an additional 1 to 2 minutes. Spread on foil lined baking sheet and allow to cool. In jar combine remaining oil, honey, lime peel, and juice, mustard and salt. Shake until well blended. Chill In large serving bowl combine spinach, strawberries and grapefruit. Top with dressing and almonds just before serving
