Banana Stuffed French Toast

Ingredients

  • French bread sliced thick and cut a pocket into each slice
  • 3 bananas sliced
  • 4 TBS butter
  • 1/4 cup brown sugar
  • pinch of cinnamon
  • 1 tsp rum extract
  • 3 oz cream cheese, softened
  • 4 eggs
  • 1/2 cup heavy cream
  • 1 1/2 cup milk
  • 2 tsp cinnamon

Preparation

Step 1

Melt butter in skillet, add brown sugar and pinch of cinnamon. Add bananas and rum extract. Fold in 3 oz cream cheese. Set aside.

Whisk eggs, cream, milk and 2 tsp cinnamon, pour into a 9x13" baking dish.

Stuff each slice of bread with equal amounts of banana filling. Put into egg mixture then turn over to coat each side.

Bake 350 degrees for 25 minutes.
