Chicken, black bean and corn salad

So light and fresh. Yum! Great for a picnic or summer hot night dinner. Southwestern flavor. Would be a nice side dish too without the chicken.

Ingredients

  • 1/4 white onion chopped
  • 1/2 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 15 oz. can black beans rinsed and drained
  • 15 oz can corn rinsed and drained
  • 2 tbspn or more lime juice
  • 1 tbspn corn/canola oil
  • 8 + oz cooked diced chicken
  • 1/2 packet taco seasoning
  • 4 tbspn or more fresh cilantro chopped

Preparation

Step 1

Cook the chicken with some Salt and pepper
mix together the peppers, beans, corn, lime juice and oil. Add the cooled chicken, taco seasoning and cilantro.
Let mingle in fridge an hour or so (optional)
Serve with romaine leaves under to use as scoopers or lettuce tacos.
