Ingredients

  • 2 tsp olive oil
  • 1 small onion chopped
  • 1 Tbs chopped garlic
  • 1 14 oz can dice fire roasted tomatoes
  • 1/2 tsp coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp oregano
  • 1.4 cup cilantro
  • 1/2 lb ground beef
  • 1 15 oz black beans
  • 8 corn tortillas
  • 1 1/4 cup cheddar cheese

Preparation

Step 1

1. Preheat oven to 350. Heat oil in a large nonstick skillet. Add onion and cook until soft. Add garlic for one more minute. Add tomatoes and spices. Stir in cilantro.
2. Cook beef, then drain and stir in beans. Warm tortillas so they roll easy.
3. Spread sauce on bottom of baking dish. Wrap meat and cheese in tortillas, seam side down. Pour the remaining sauce and cheese on top.
4. Bake 20 minutes until cheese is melted.
