Ingredients
- DEVILS FOOD CAKE:
- Softened unsalted butter and flour,for pans
- 2 1/4 cups sugar
- 1 3/4 cups cake flour(not self rising)
- 1 1/4 cups unsweetened cocoa powder
- 1 tsp each baking soda and baking powder
- 1/2 tsp salt
- 3 large eggs+ 1 large yolk
- 1 1/2 cups buttermilk
- 3/4 black coffee,cooled
- 1/2 cup(1 stick) + 1 tbsp unsalted butter, melted, cooled
- 1 tbsp vanilla extract
- RICH CHOCOLATE FILLING:
- 1 cup heavy cream
- 9 oz semisweet chocolate,chopped
- 1 tsp vanilla extract
- FLUFFY FROSTING:
- 3 large egg whites
- 3/4 cup sugar
- 3 tbsp water
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
Preparation
Step 1
preheat oven to 350
cake:
-Butter and flour 2 9 by 2 inch round cake pans
-In bowl mix sugar, flour, cocoa, soda, powder and salt
-In clean bowl,whisk eggs and yolk
-Whisk in remaining ingredients
-Whisk into flour mixture
-Scrape into pans
-Bake 38 to 40 minutes, until pick tests clean,cool in pans on rack 20 min,turn out,cool
Filling:
-In saucepan,heat cream to a simmer
-Combine with chocolate in metal bowl
-Let stand 5 min,stir to melt
-Add vanilla
-Let bowl cool in ice bath,stirring,until spreadable,15 min
Frosting:
-In bowl, mix all ingredients except vanilla
-Beat until foamy,1 min
-Place bowl over simmering water,making sure bottom doesn't touch water
-On low speed,beat until 160f,10 min
-Remove from heat,add vanilla
-On high,beat until stiff,shiny peaks form,7 min
-Place 1 layer on plate
-Spread filling over layer;top with layer
-Cover cake with frosting
-Serve,or refrigerate up to 1 day
