Corn scallop

Ingredients

  • 2 eggs
  • 15 oz whole kernel corn, undrained
  • 15 oz creamed corn
  • 1 6oz evaporated milk
  • 2 tbsp butter
  • 2 tbsp minced onion
  • 1/4 tsp pepper
  • 2 c coarsely crushed saltine crackers
  • 12 oz pepper Jack or swiss cheese

Preparation

Step 1

Heat oven to 325. Grease 13x9 pan.
Beat eggs slightly in large bowl.
Stir in corns. Add evaporated milk, butter, onion and pepper. Fold in cracker crumbs and cheese.
Spoon into dish. Bake 1 hour or until set. Let stand 5 min. Cut into squares and serve.
