CARROT CAKE with Pinapple-Walnuts-Raisins

Ingredients

  • 1 cup 1 cup flour
  • 3 3\4 cup sugar
  • 1 teaspoon 1 teaspoon baking powder
  • 1 teaspoon 1 teaspoon soda
  • 1 teaspoon 1 teaspoon cinnamon
  • 1 teaspoon 1 teaspoon ginger
  • pinch pinch salt
  • 2 2 pineapple rings cut into small chunks
  • 1-1/2 cups 1-1/2 cups grated carrots packed
  • 1/4 cup 1/4 cup raisins
  • 1/2 cup 1/2 cup chopped walnut pieces
  • 2 2 eggs
  • 1/4 cup 1/4 cup oil
  • 1/2 cup 1/2 cup milk
  • 1 teaspoon 1 teaspoon vanilla
  • For the icing
  • 4 oz 4 oz cream cheese
  • 1/4 cup 1/4 cup powder sugar
  • 1 teaspoon 1 teaspoon lemon juice
  • mix adding more powder sugar as needed

Preparation

Step 1

Set oven 350 degrees grease 9 inch round pan or 9 inch square pan
Stir dry ingredients into a large mixing bowl mix
Dry pineapple pieces with paper towel add grated carrots and raisins
add to dry mixture and mix until coated mix with hands
Beat eggs, oil, milk and vanilla together
Add that mixture to dry mixture with carrots
Mix together and pour into prepared pan
bake 25 -27 min checking with a tooth pick till comes out clean when inserted in center of pan
Cool before spreading a thin layer of icing on top
