Silvek’s “Florentina Cookies”

Ingredients

  • (makes about 50)
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1/4 cup honey
  • 1/4 cup heavy cream
  • 1/2 cup chopped almonds

Preparation

Step 1

Mix the sugar, cream, butter, and honey into a small saucepan. Cook over medium heat and stir occasionally, until mixture comes to a rolling boil and sugar is completely dissolved. Remove from heat and stir almonds into the mixture. Let it cool for 15 minutes.
Take a spoon and scoop the mixture onto a baking pan covered in wax paper. Leave about 3 to 4 inches between each cookie since they will spread.
Bake at 380 degrees for ten minutes or until the cookies are thin and golden brown.
