Shirley's Scotch Shortbreads
from the Fannie Farmer cookbook
- add gradually, while beating:
- Cream thoroughly
- 1 C butter
- 1 / 2 C confectioners' sugar OR light brown sugar
- Sift together:
- 2 C flour
- 1 / 4 tsp salt
- 1 / 4 tsp baking powder
Add to the mixture. Mix well and roll out 1 / 4 inch thick. Cut in squares or rounds. Prick with a fork. Bake at 350 deg.F until delicately brown (20 to 25 minutes). Makes 24 or more.
Cut in rounds (2 to 5 inches). Cut in quarters and mark with the back of a knife like a fan. Brush with egg yolk diluted with water. Bake.
Cut out. Cover thickly with pine nuts, pressing them firmly into the cookies. Bake.
