  • Pork Belly. Get a thick meaty piece
  • Salt
  • Spices or Rib Rub

Preparation

Step 1

Slice just thru pork belly. You can also place multiple holes just thru skin with knife.
Add rub to meat side of belly and rub skin side with vinegar then rub in salt
Place in dish and place uncovered in refrigerator for at least a day
Remove from refrigerator and dry skin.
Make a bowl of tin foil around the meat, leaving skin exposed
Place in 160 degree oven for 90 minutes
Remove and switch oven to broil . Place a little oil on skin and place under broiler
Watch carefully until skin bubbles
Remove, cool. Slightly and cut
