Crockpot Hungarian Goulash

Ingredients

  • 2 pounds top round beef, cut into 1-inch pieces
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 tablespoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried thyme
  • 1 (28-ounce) can whole tomatoes, un-drained, chopped
  • 3 carrots, peeled and cut into 1-1/2-inch pieces
  • 1 bay leaf
  • 1 (8-ounce) container sour cream
  • 12 oz. cooked buttered noodles
  • 2 tablespoons salted butter

Preparation

Step 1

Combine beef, onion, and garlic; mix well. Add to crockpot

In a small bowl, combine flour, paprika, salt, pepper, and thyme. Add to meat mixture, tossing and coating well. Add un-drained chopped tomatoes, carrots, and bay leaf and mix well.

Cover crockpot and cook on HIGH setting for 4 to 5 hours, or on LOW setting for 8 to 9 hours, until beef is tender.

Remove bay leaf. Stir in sour cream. Serve over buttered noodles.
