This is one of my favorite childhood memories of food! We used to make them after school. As an adult, I've learned the longer they sit, the softer the grahams get and the better they taste! My daughter, who hates graham crackers, loves these. Whenever I make them, I make sure she gets a surprise one in her lunch box.....Try them with the Chocolate Graham crackers -- they're great like that too. I do the icing totally by sight and taste but here is what I think the measurements would be -- just use your best judgement.

Ingredients

  • Icing:
  • 1 Box of Graham Crackers
  • approx 3/4 stick of butter, softened
  • 3-4 cups powdered sugar
  • 2-3 T heavy cream or milk
  • Color of choice

Step 1

Layout all the graham crackers first so you can remove the broken ones. For the icing, take your butter and place in a bowl. I take the back of a spoon and mash it down until it's very smooth. I add a little powdered sugar and incorporate that, then start slowly (very slowly)adding your milk and your sugar alternately, until it's creamy and semi-thick. If it's too runny, it'll run out of the grahams and it's just not the same. (Of course, you can do it the easy way and use a mixter! LOL).
Spread icing over 1/2 of graham, set the other half on top and smoosh it down a tad. After approx 2 hours of sitting, break them on the dotted line (so to speak) to makes halves. I keep them in a gallon bag, zipped shut, so the grahams soften.
