Roasted Mushrooms and Shallots with Fresh Herbs

Ingredients

  • 2 1/2 tbs sesame oil
  • 4 cloves garlic
  • 3 tbs minced ginger
  • 1 1/2 tbs soy sauce
  • 1 1/4 lbs mixed mushrooms
  • Salt
  • 10 small shallots
  • 1/3 cup chopped mint
  • 1/3 cup chopped parsley
  • 1 tbs chopped dill
  • 1 tbs roasted black sesame seeds

Preparation

Step 1

Preheat the oven to 400 F

In a small bowl, combine 2 tbs of the sesame oil with the garlic, ginger and soy. Spread the mushrooms on a baking sheet and drizzle with teh garlic - sesame oil mixture. Toss to coat. Sesaon with salt. Roast the mushrooms for about 30 minutes until tender and glazed.

Meanwhile, on a second large rimmed baking sheet drizzle the shallots with the reaming 1/2 tsp of sesame oil toss to coat. Season with salt. Roast for 25 min turning once.

Add the herbs with the mushroom and shallots. Serve
