Soup, Good Luck

This is a fun gift idea. Layer the beans in a quart jar and attach a copy of the recipe, showing the contents of the jar will make 2 pots of soup.
Ingredients
- Cup each:
- Pinto Beans
- Red Kidney Beans
- Navy Beans
- Split Peas
- Lentils
- Black-eyed Peas
- Black Beans
- Baby Lima Beans
- 1 large onion
- ham or ham hock
- 1 large can tomatoes
- 1 large red pepper, chopped
- 2 clove garlic, minced
- Juice of 1 lemon
- pinch of ginger
- salt and pepper to taste

Preparation
Step 1
1. Empty beans into a bowl and mix well. Divide beans in half. Save one half for another day. Wash beans.
2. Place in a large pot, cover with water, add 2 Tbsp. salt, cover and refrigerate overnight.
3. Drain and place beans in a large pot. Add 2 quarts water, ham or ham hock, 1 large onion - sliced. Boil slowly up to 2 1/2 - 3 hours, but check it around 1 hour. Add hot water when necessary.
4. Add 1 large can tomatoes, 1 large red pepper, chopped, 1 clove garlic, minced, juice of 1 lemon, pinch of ginger, salt and pepper to taste.
5. Simmer until ready to serve.
