Ingredients

  • 1/2

    Cup each:

  • Pinto Beans

  • Red Kidney Beans

  • Navy Beans

  • Split Peas

  • Lentils

  • Black-eyed Peas

  • Black Beans

  • Baby Lima Beans

  • 1

    large onion

  • ham or ham hock

  • 1

    large can tomatoes

  • 1

    large red pepper, chopped

  • 2

    clove garlic, minced

  • Juice of 1 lemon

  • pinch of ginger

  • salt and pepper to taste

Directions

1. Empty beans into a bowl and mix well. Divide beans in half. Save one half for another day. Wash beans. 2. Place in a large pot, cover with water, add 2 Tbsp. salt, cover and refrigerate overnight. 3. Drain and place beans in a large pot. Add 2 quarts water, ham or ham hock, 1 large onion - sliced. Boil slowly up to 2 1/2 - 3 hours, but check it around 1 hour. Add hot water when necessary. 4. Add 1 large can tomatoes, 1 large red pepper, chopped, 1 clove garlic, minced, juice of 1 lemon, pinch of ginger, salt and pepper to taste. 5. Simmer until ready to serve.
