Lamb, Rack, With Pesto Bread Crumbs

Ingredients

  • 1 1/2 pounds lamb chops, Frenched
  • 1/3 cup pesto sauce
  • 3/4 cup bread crumbs, from fresh bread

Preparation

Step 1

Preheat oven to 375 degrees.

Season the lamb with salt and pepper.

Spread the pesto evenly over the surface of the meat.

Coat the meat thoroughly with the bread crumbs.

Cover the bones with aluminum foil and place the lamb rack on a baking sheet.

Roast in 375 degree oven for 15 minute. Remove the foil and roast for another 20 minutes.

Remove lamb from the oven. Let rest for 10-15 minutes before carving.

Slice into thick, double chops or single chops, if desired.

Serve with additional pesto, if desired.
