Ingredients

  • 1 lb. green beans
  • 1 tbsp. olive oil
  • 2 cloves garlic
  • 4 anchovy fillets mashed or 1 tbsp. paste
  • pinch red pepper flakes
  • 2 tsp. red wine vinegar3 tbsp. pine nuts, toasted in dry skillet
  • 3 tbsp. grated parmesan
  • chopped parsley to garnish
  • ground black pepper

Step 1

Over medium heat, sauté garlic, anchovies, and red pepper flakes just until fragrant. Add beans and toss for 3-4 min. Add vinegar and pine nuts and toss again. Transfer to serving bowl. Top with parmesan, parsley, and pepper.
