Ingredients
- 1 lb chicken breasts, cubed
- 1 onion, chopped
- 2 cups frozen mixed vegetables
- 2 eggs
- 3 cups cooked rice
- soy or teriyaki sauce
Preparation
Step 1
Heat oil and cook chicken. Add onion and vegetables (do not need to thaw first). Stir fry until chicken is done and vegetables are crisp tender. Break eggs into mixture and cook. Add rice and cook until heated through. Season with sauce and serve.
