Indian Style Zucchini Mushroom Saute

Ingredients

  • 1 medium yellow onion, chopped
  • 2 Tablespoons peanut or olive oil
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon chili powder
  • 3 cups sliced mushrooms ( small box )
  • 2 medium zucchini, thinly sliced
  • 1/2 cup cilantro, minced
  • 3 Tablespoons cream ( optional )

Preparation

Step 1

Using a wok or large saute pan, heat the oil on high, but do not allow it to smoke. Saute the onion until browned. Lower heat to medium, and add the spices.
Stir to coat the onions, for a minute or less. Add the mushrooms and zucchini. Stir-fry gently until soft, about 5 minutes, adding 1/4 to 1/2 cup water if needed. Fold in cilantro. If desired, add cream, and then turn off heat and allow pan to sit on the burner for a few minutes to warm the cream.
