French Onion Soup

Ingredients

  • Toasted bread topping:
  • 10-12 small onions or 6-8 Spanish onions
  • 3 qts. beef stock (can substitute some red wine for some beef stock)
  • 1 tsp. worcestershire sauce
  • 1/2 tsp. Tabasco
  • 1 tsp. kitchen bouquet
  • salt & pepper
  • 1/4 cup parmesan cheese
  • French bread
  • butter
  • Grated swiss, gruyere, or fontino cheese

Preparation

Step 1

Saute onions slowly until DARK brown

Add the beefstock, worcestershire, tabasco, kitchen bouquet & bring to a boil. Reduce heat & simmer for 4 hours. Adjust salt & pepper. Add 1/4 cup parmesan cheese.

Put soup in individual crocks. Add slice of toasted bread & cover with grated cheese. (Can use thinly sliced cheese)

Put crocks on cookie sheet for easier handling. Bake at 425* for 10 minutes until bubbly or until cheese is brown..

Toasted breaad: Cut up French bread. Dip in butter & parmesan cheese. Toast under broiler.
