Stormy Rice

Ingredients

  • 2 TBS olive oil
  • 2 cloves garlic, crushed
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup chopped peanuts
  • 1/2 cup diced green onions

Preparation

Step 1

Toast rice in heated oil until slightly browned. Add garlic.
Add chicken broth and cover simmering 15 minutes. Let rest 5 minutes.

Toss in peanuts and green onions. Salt and pepper. Fluff and serve.
