Potato Pancakes

Ingredients

  • 2 cups mashed potatoes (without added milk and butter)
  • 1 egg, slightly beaten
  • 1 Tbsp minced chives
  • 1 tsp fresh parsley
  • 3/4 tsp salt
  • 1/8 tsp dried minced garlic
  • 1/8 tsp peeter
  • Dash dried rosemary, crushed
  • 1/2 shredded cheddar cheese
  • 4 Tbsp canola oil, divided

Preparation

Step 1

In a large bowl, combine all ingredients but cheese and oil.
Heat 2 Tbsp oil in large nonstick skillet over medium heat. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Cook in batches for 2-3 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels.
