Spaghetti Squash With Avocado Cream Sauce

Ingredients

  • 1 medium spaghetti squash, roasted
  • 1 ripe avocado, peeled
  • 1 large clove garlic, peeled
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • fresh cilantro or basil - I use whichever I have on hand, but basil is my favorite- about 5-6 stems

Preparation

Step 1

Roast squash and set aside to cool.

While squash is cooling, combine all other ingredients in blender.

Pulse a few times until herbs are incorporated into the sauce.

When squash is cool enough to handle, scrape inside with a fork to produce spaghetti shaped strands.

In a large bowl combine squash and cream sauce. Stir until all squash is coated.

Garnish with fresh chopped herb of choice
