Classic Potato Latkes

Use a bag of frozen hash browns to cut a few corners on this traditional Hanukkah dish! The fried potato pancakes are always a hit, and this recipe makes them so easy to bring together. Feel free to add in other veggies to the mix for a whole new taste.

Ingredients
- 1 lb Frozen Hash Browns, thawed
- 1 Sweet Onion, chopped
- 1/2 cup Flour
- 3 Eggs
- 2 tsp Salt
- 1 tsp Baking Powder
- 1 cup Olive Oil
- Pepper

Preparation
Step 1
Add the onion to a food processor and blend until smooth. Squeeze out the moisture and mix with the remaining ingredients, except the oil, in a large bowl. Heat the oil in a skillet and form the mixture into balls with your hands. Flatten them and fry in the oil. Cook for 5 minutes per side. Serve warm.
