Quinoa Taboule

Ingredients

  • 1/2 cup green onions, chopped
  • 1 cup italian flat leaf parsley, chopped
  • 1/2 cup fresh lemon juice, fresh
  • 2 cups quinoa, cooked and cooled
  • 1/2 teaspoon white pepper
  • 2 tablespoons fresh basil, minced
  • 2 tablespoons fresh mint, chopped
  • 1/2 teaspoon sea salt
  • 1/4 cup Simple Truth olive oil
  • 1 clove garlic, minced

Preparation

Step 1

Prepare quinoa as directed on package; cool.

Toss together all ingredients. Chill for 1 hour or more to allow flavors to blend.
