Breakfast Cookies

Ingredients

  • • 3/4 c flour
  • • 1/2 t cinnamon
  • • 1/2 t baking powder
  • • 2/3 c butter or margarine, softened
  • • 1/3 c brown sugar
  • • 1 egg or equivalent egg substitute
  • • 1 t vanilla extract
  • • 1 medium apple
  • • 1 1/2 c quick-cooking oatmeal
  • • 1 c colby or cheddar cheese,
  • shredded
  • • 3/4 c raisins

Preparation

Step 1

1. Preheat oven to 375 degrees.
2. Mix together the flour, cinnamon and baking powder.
3. Stir in the butter/margarine, brown sugar, egg and vanilla.
4. Peel and core the apple; chop it into small pieces or shred it.
5. Add apple pieces, oatmeal, cheese and raisins. Stir.
6. Place large spoonfuls on an ungreased cookie sheet.
7. Bake at 375 for 15 minutes.

Store in a covered container in the refrigerator.
